Grilled Vidalia® Onions and Tomato Toast
Nothing excites me more than warm bread, ripe tomatoes, Gorgonzola cheese and of course, sweet Vidalia Onions to compose this symphony of simplicity.
Ingredients
- 4 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- 2 Vidalia Onions, cut into 4 inch slices
- 2 tomatoes, grated
- 1 tablespoon chopped chives
- 4 slices rustic bread
- 1 teaspoon minced garlic
Instructions
Prepare grill (medium-high heat). Brush sliced Vidalia Onions with olive oil, season with salt and pepper. Grill slices until tender, about 5 minutes per side.
Wash tomatoes and slice them in half. Coarsely grate the open-flesh sides into a large mixing bowl, discarding skins. Add minced garlic, pinch of salt and pepper.
Spoon an even amount of tomato mixture on each slice of toast. Top with grilled Vidalia Onions and sprinkle with Gorgonzola cheese.
