Shrek’s Toadstool Stacks

These Shreked-out tasty creations have one thing in common, the sweet flavor of Vidalia® Onions. Best of all, these recipes are not only delicious but they’re good for you too! Vegetable-loaded Turkey Meatloaf Stacked with Slices of Roasted Vidalia® Onion, Zucchini & Vine Ripe Tomato


  • 4 slices white bread, crusts trimmed, torn into pieces
  • 8 small sage leaves
  • 1 1/2 pounds ground lean turkey
  • 1 medium Sweet Vidalia®> Onion, cut into eighths
  • 1 carrot peeled and cut into 2-inch pieces
  • 1 stalk celery, cut into 2-inch pieces
  • 1/2 t. dried thyme
  • 1 large whole egg, lightly beaten
  • 2 T. tomato paste
  • 4 t. Dijon mustard
  • 1 t. Worcestershire sauce
  • 3/4 t. coarse salt
  • Freshly ground black pepper
  • 3/4 C. Ketchup
  • 1 ea. vine ripe tomato cut into 6 slices
  • 1 medium Sweet Vidalia onion sliced into 6 slices
  • 1ea. large zucchini squash cut into 6 slices


Preheat oven to 375 degrees, with rack in center. Place bread and sage leaves in the bowl of a food processor; pulse to form fine crumbs. Transfer to a medium bowl, and add ground turkey. Place the sweet Vidalia onion, carrot and celery in bowl of food processor; pulse until finely chopped. Add to turkey mixture, using hands to combine. Add thyme, whole egg, tomato paste, mustard, Worcestershire, and salt; season with pepper, combine well. Form into 6 equal balls and press into sprayed muffin tins. Pour ketchup on each meatloaf and spread evenly. Transfer pan to oven; place a baking sheet on lower rack to catch drippings. Bake meatloaf until a meat thermometer inserted in center of meatloaf registers 170 degrees, about 45 minutes. On a separate cookie sheet, drizzle the sliced vegetables with extra virgin olive oil and season with salt and pepper. Build your stacks by placing the sweet Vidalia onions on the bottom then the Squash and then the tomato. Bake for the final 15 minutes with the meatloaf. Remove from oven, to serve; carefully turn out the individual meatloaf’s and place on the center of your serving plate, place a vegetable stack on top of each meatloaf and serve with simple mashed potatoes and gravy.
